What freeze-drying does.

Freeze-drying removes moisture from whole plants at low temperatures through sublimation. The cellular structure, nutrition and flavour are preserved.

It is not dehydration. Dehydration uses heat, which destroys much of what makes a plant valuable in the first place.

The process is standard in pharmaceutical and aerospace industries. We apply it to whole Australian-grown plants at consumer scale. The only reason the food industry doesn't do this universally is cost.

That has never been a good enough reason for us.

The result: shelf-stable for two years at room temperature. No freezer, no fridge, no cold chain. Take a pouch to work, pack one for travel, keep one in the car.

We work with Australian farmers and the seasons they grow in. Each batch reflects the region and the season, because that is what real food does.

We prioritise responsibly grown Australian produce meeting strict quality standards — both certified organic and premium conventional farms. What never changes: whole plants, nothing added, nothing hidden.

Optimal Greens will be among the first Australian food products submitted to a simulated human digestive system trial. There are only two such machines in the world. One is in Belgium. The other is at the University of Queensland, St Lucia, the suburb where GreenSky operates.

We are not required to fund this research. We chose to, because in an industry that makes health claims nobody can verify, nature is the final judge.
