Why greens, specifically
Most Australians do better with vegetables than they think.
We eat tomatoes. Carrots go in the fridge and mostly get used. Sweet potato, pumpkin, capsicum, corn — the reds, the oranges, the yellows. These turn up in dinners without anyone having to try very hard. They're cheap, they keep, they roast, and children will generally eat them.
Greens are the exception.
Not because people don't know they should. Everyone knows. It's the single most repeated piece of nutritional advice in the country, and it has been for forty years. Knowing has never been the problem.
The problem is that greens are genuinely difficult.
They're expensive per gram of what you actually eat.
A bunch of kale looks reasonable at the checkout until you strip the stems. Spinach wilts to a fraction of what you bought. Herbs cost several dollars for a handful and go slimy in the crisper within the week. You're not paying for weight — you're paying for the small portion of the plant that survives to the plate.
They're fiddly.
Washing. Destemming. Drying. Chopping. Bok choy needs separating and rinsing between the leaves because grit hides down there. Coriander needs picking over. Kale needs the tough spine cut out or it's unpleasant to eat. None of it is hard, exactly. All of it is a decision you have to make while you're tired.
And they don't reward you the way other vegetables do.
Roast a pumpkin and it caramelises. It smells like something. Boil silverbeet and you get a grey-green pile that tastes faintly of the sea. Greens ask more of you and give back less — at least in the immediate, sensory way that determines what people actually cook on a Tuesday night.
So they get skipped. Not through ignorance or laziness, but because the effort-to-reward ratio doesn't hold up against everything else competing for that fifteen minutes.
And yet greens are among the most potent, most studied and most consistently recommended whole foods in human nutrition. Leafy greens especially, but also the brassicas, the cucurbits, the herbs. They're the group nutritionists keep pointing at. They're also the group that most reliably doesn't make it into the trolley.
That gap — between what's most valuable and what's most avoided — is the whole reason GreenSky exists.
What we did about it
We didn't try to make greens easier to cook. That problem has been attacked for decades — pre-washed bags, frozen blocks, meal kits — and it hasn't moved the needle much, because the underlying friction is still there.
We took the greens out of the cooking equation entirely.
Each Optimal Greens sachet starts as 100g of fresh whole plants — vegetables, fruits, herbs and spices, grown in Australia. They're blended, then freeze-dried, which removes the water at low temperature and leaves the cellular structure intact. What's left weighs about 10g.
No washing. No destemming. No wilting. No slime in the crisper. Tear, stir, drink. Thirty seconds.
It isn't a replacement for cooking. If you love making a good silverbeet and ricotta filling, keep doing it — nothing here beats that. It's for the days when the choice isn't between greens and better greens. It's between greens and none.
The colours we're not solving
Worth saying plainly: we haven't tried to make a product that does everything. There's no beetroot here, no berry powder, no attempt to cover every colour of the spectrum.
Australians are mostly fine on the reds and oranges. Adding them would make the product bigger, more expensive, and no more useful.
Greens are the gap. So greens are what we made.

Be Alert for Fake Food Claims


RISE UP
Improve your yesterday.
Understand you’re personally responsibility.
Set the bar properly low to be manageable. Don’t try too hard. Just start something that you know will improve you from yesterday. Set yourself a goal you can obtain, especially if you’re not in very good shape. It might not be very glorious but it’s better then nothing and its way better than blaming or justifying.
Be grateful for what you have and notice how everything gets better.
Take an incremental step. Start with drinking just water every day for a week. Then add a veggie pod to your morning routine - that is one step on a very long journey - and it starts to compound which means your next step will be slightly more challenging the next week.
Do that for 2-3 weeks and you start to stride. It's the right way forward.
When you start to succeed, you succeed more rapidly.

Everything we do uses materials and tools that were made by someone else. When we wrote a newsletter 20 years ago, we spent a lot of time and effort printing then mailing it that you could type up today and send to thousands in less than an hour.
