I moved out of home three days before my sixteenth birthday.

I didn't quit school. I ironed my uniform every morning. I started a weekend market stall selling second-hand books, clothes, handmade lace pillowcases, because the rent had to be paid. It was my first business. It worked.

I have never worked for anyone else.

From that market stall I built a personal training practice. Then a personal training agency. I trained some of Australia's most senior executives, CEOs, chairs, captains of industry and I learned something in every single session: the gap between how people live and how well they feel is almost always food.

In 2018 I founded GreenSky. I saw a problem that nobody was solving honestly.

Three in four Australians don't eat enough vegetables because the life they're living makes it genuinely difficult. And the industry that was supposed to help them replaced real food with synthetic powder, proprietary blends and health claims nobody could verify.

I decided that wasn't good enough.

The decision that changed everything.

During COVID I sat in a bathtub and thought at a depth that seven years of seven-day weeks had never allowed.

I had always known freeze-drying was the superior method. It preserves the cellular structure, nutrition and flavour of a whole plant in a way nothing else can. The only reason the food industry doesn't use it universally is cost.

That is not a good enough reason.

In April 2025 I was diagnosed with significant pelvic cancer. Six surgeries. Chemotherapy. Radiotherapy. Two of Queensland's finest hospitals. Australia's Medicare system. Extraordinary human beings in scrubs.

I am now disease free.

The decision to end seven years of frozen vegetable production and build Optimal Greens from the ground up was made from a hospital bed, despite what I was going through.

One of only two simulated human digestive system trials in the world. The other machine is in Belgium. Ours is at the University of Queensland, the suburb where GreenSky lives.
